ORIGIN : Panama
VARIETY : Geisha
PROCESS : Washed
The Janson family has been farming in Panama since the 1940s, on land around the Tisingal and Barú volcanoes.
HACSA is one of the farm’s Geisha-producing areas. The estate combines coffee production with a substantial private nature reserve and has developed an unusually considered approach to the resources used in processing - from mountain spring water to solar energy and the reuse of coffee by-products.
For us, this washed lot is about precision: allowing a remarkable variety and terroir shine bright in the cup.
This is our favourite kind of Geisha.
Floral aromatics sit above a clean fruit sweetness and articulate acidity
The pleasure of this cup is in its definition: individual flavours appear and fade just as new notes and tones shine as the temperature falls, held together by a light, elegant structure.
