Didier Pajoy is widely regarded as one of the most important producers Osito works with in Colombia. Osito’s relationship with Didier predates even the company’s earliest days, and over the years he has continued to prove himself an increasingly invaluable partner. Coming from a coffee-producing family in La Plata, Huila, Didier lives on his farm, La Esperanza, in the vereda of Alto Cañada with his wife, Flor, their son, and their new baby. His parents and many extended family members also live nearby, making coffee production deeply rooted in both his family and community life. As a producer, Didier is exceptionally curious and detail-oriented, constantly experimenting and refining his approach in pursuit of better coffee with each harvest. His commitment to quality and innovation is reflected in every lot he produces, and his coffees consistently stand out for their precision and care. Beyond his own farm, Didier is the founder and leader of Mártir Coffee, one of Osito’s closest partnerships in Colombia. In this role, he recruits, coordinates, and trains nearly 50 producers across La Plata, Paicol, Nátaga, and La Argentina. He is deeply committed to supporting his neighbors and improving the quality of life for everyone within his network. Didier also manages Osito’s purchasing point in downtown La Plata, where he oversees samples and lot deliveries from the Mártir group as well as producers throughout western Huila and eastern Cauca. With extensive experience in green grading and sensory analysis, he also serves as a judge in Osito’s annual Copa de Oro competition. This year marks the first time Didier has placed in the competition’s top five.
