The farm benefits from fertile volcanic soils, high elevations, and a cool mountain climate that create ideal conditions for producing high-quality coffee. PROCESS

The washed process at Barú Black Mountain is designed to highlight clarity, brightness, and the intrinsic qualities of each coffee variety. After harvesting, ripe coffee cherries are carefully selected and depulped to remove the outer fruit. The beans then undergo fermentation, which helps break down and remove the remaining mucilage. Following fermentation, the coffee is thoroughly washed with clean water before being dried under carefully controlled conditions. By removing most of the fruit material before drying, the washed process emphasizes clean flavors, vibrant acidity, and a transparent expression of origin, allowing the farm’s terroir and varietal characteristics to shine in the final cup.
