The Hartmann family's coffee legacy spans over a century in Panama's Renacimiento region, beginning with Czech immigrant Alois St. Hartmann who established the estate in Chiriquí after emigrating during WWI. With 30+ years as a coffee consultant, Ratibor specializes in artisanal processing, creating specific flavor profiles while respecting each varietal's inherent characteristics.
Varietal
Maragogype is a distinctive coffee varietal known for its unusually large beans, often called “elephant beans.” It originated as a natural mutation of Typica in Brazil and later spread to Central America, particularly Nicaragua and Mexico. Maragogype plants tend to be low-yielding and delicate, which makes them challenging to cultivate. In the cup, this varietal is prized for its mild body, low acidity, and elegant, nuanced flavors. When grown at high altitudes and carefully processed, Maragogype can show notes of floral aromas, soft fruit, chocolate, and a gentle sweetness that appeals to fans of refined, subtle coffees.
